The Best Yam Soup You'll Ever Taste!

1/2c cooking oil
2 lbs onions, chopped
5 lbs yams, peeled & sliced
1 lb carrots, sliced
5 litres vegetable stock
2-28oz cans tomatoes
1/3c peanut butter
12 cloves garlic, minced or crushed
1 bunch parsley, chopped
2 tbsp hot sauce
2 tbsp fresh ginger, grated
1.5 tbsp cumin
2 tbsp curry powder
1 tsp each salt & pepper (or to taste)

Saute onions in oil until soft.
Add all ingredients to onions in a large stockpot.
Bring to a gentle boil, then reduce to a simmer.
Cook for an hour or more until veggies are soft.

Options: Serve as is - a chunky vegetable soup - OR
puree in batches in blender - smooth creamy soup.
