Chicken Penne
Ingredients:
2 cups of penne pasta
500g of diced chicken breast
1 finely chopped capsicum
250g of Philadelphia Light cream cheese
2 tablespoons of grated parmesan
2 tablespoons of sliced green olives
2 teaspoons of fresh rosemary leaves
1/2 cup of low fat milk
1 teaspoon of olive oil
Follow the directions on the packet for the pasta to cook it. Cook the chicken in a little oil until it is golden brown and cook all the way through. In a different pan, cook the capsicum, then add the cream cheese, milk and the parmesan. Stir until it forms a smooth creamy consistency. Then combine the pasta, sauce, chicken, rosemary leaves and green olives and stir together. Decorate with a little extra parmesan cheese.
